Introducing this week’s breakfast indulgence. You can make them in a half an hour tonight, and have an awesome grab and go breakfast for the rest of your week!
Blueberry Almond Oat Bran Morning Muffins.
Start by lining up your ingredients. This recipe is a two bowl, dump and stir, little gem (adapted from allrecipes.com)
Then set out your two bowls and get to combining.
At about cinnamon, plus brown sugar, plus apple sauce, you are going to want to shove your nose in the bowl. Courtney and I both did. And that sensation only gets more pronounced once they hit the oven – except it’s clearly less safe to shove your nose in the oven.
As Courtney stood next me, watching me scoop the batter into the muffins cups – she started putting the extra blueberries into the tops of the batter. Highly recommend you do the same!
The real story behind the Oat Bran Muffins has to do with the hands in this picture. Courtney and I were at Whole Foods last weekend, and thinking she was getting Steel Cut oats (? right, or maybe she wanted Scottish Oats… the girl is on a crusade for a certain kind of oats and I can’t tell which kind yet) she picked up a container of Oat Bran. After two failed attempts to microwave herself a bowl of morning oat bran, and subsequently half a roll of paper towels later, she decided we needed to find another use for these grains. (LOL)
Voila, the best morning muffins… and best (and safest) use of Oat Bran there is.
So what if she got delish, warm blueberries all over her hands… it sure was better than soaking up boiled over oats in the microwave.
Sitting there, using my pointer finger to pick up any stray crumbs left on the plate I just felt happy. They are those kind of muffins… and if you don’t have blueberries indulge yourself in raspberry, strawberry, or banana almond muffins. I am sure they are perfectly fine substitutions for these absolutely beautiful morning bites.
Okay…. back to business here in Barnes & Noble – trying to figure out how to improve this little blog.
